My sweet friend Sandi made some Orange Brownies (or Orangies as my father-in-law calls them) for a parenting conference we had a church a few months ago. They were a big hit and she graciously shared the recipe with me.

Guess what that means??

Yes! I get to share the recipe with you guys! No need to thank me. Typing up this post gets me out of doing dishes right now, so I am more than happy to share! :)

Ok, lets get to it.

For the batter you will need sugar, flour, butter, eggs, orange extract, salt and orange zest. Simple stuff.

 

 

Stir the dry ingredients together.

 

 

And then zest an orange.

(If you don't have a microplane zester you need to rectify that situation asap. It is one of my FAVORITE kitchen tools!)

 

 

You are going to need a heaping teaspoon of that citrus-y goodness.

 

 

Add eggs, butter, orange extract and zest to the dry ingredients and mix on medium speed until well blended.

 

 

Wala.

 

 

Spread batter into a 9x13 baking dish (sprayed with cooking spray) and pop that baby into the oven. Cook for 20-30 minutes.

(Less cooking time will give you gooey brownie type things, more time will give you a cake-like dessert.)

 

 

Once the Orangies are done and you have taken them out of the oven you need to make the glaze.

 

 

Combine one cup of confectioners sugar, 2 tablespoons of orange juice and one teaspoon of zest together.

 

 

See. Nice and glaze-like!

 

 

Now pierce the brownies with a fork...

 

 

And then pour the glaze all over. After they cool cut them into squares and serve! This is such an easy and yummy citrus-y dessert. In fact I think I am going to whip this up later this week!

Orange Brownies

2 cups sugar
1 1/2 cups all purpose flour
1 teaspoon salt
1 cup butter, softened
4 large eggs
2 teaspoons orange extract
2 teaspoons orange zest, divided
1 cup confectioners sugar
2 tablespoons orange juice
Garnish: fresh orange rind

Preheat oven to 350 degrees.  Spray a 13x9 inch baking pan with nonstick cooking spray.
In a large bowl, combine, sugar, flour, and salt; add butter, eggs, orange extract, and 1 teaspoon zest.  Beat at medium speed until well blended.  Spread batter into prepared pan, and bake for 30  minutes, or until golden brown and set in center.  Remove from oven, and pierce brownies with a fork.

In a small bowl, combine confectioners' sugar, orange juice , and remaining 1 teaspoon zest; stir until smooth.  Pour glaze over brownies. Cool, and cut into squares.  Garnish with fresh orange rind, if desired.
